Investigation of the Properties of Fats (Solubility, Evidence of the Unsaturated Nature of Carboxylic Acid Residues)

Place 1 cm3 of vegetable oil and approximately 2–3 cm3 of water into a test tube. Close the test tube with a stopper and shake it. Separation of the contents is observed. The layer of vegetable oil is on top. Draw a conclusion about the solubility of fat in water and the density of vegetable oil (recall that the density of water is 1 g/cm3).

Laboratory Experiment 5. Investigation of the Properties of FatsAdd 1–2 cm3 of bromine water to the test tube with vegetable oil, close it with a stopper, and shake it. Based on the decolorization of the bromine water, draw a conclusion about the presence of double bonds in the fat molecules.
